Inspired by the classic Thai soup, this ice cream is a bright, creamy balance of citrus, mild heat, and aromatic herbs. Our coconut milk base is infused with lime leaf, lemongrass, galangal, and Thai chiles, creating a deeply fragrant, savory-sweet foundation. We fold in chewy coconut macaroon pieces and finish with ribbons of lime leaf caramel for a layered, surprising scoop that’s both refreshing and whimsical.
