This month we had the opportunity to collaborate with nutritionist and health & wellness blogger Rachael Devaux. We sat down with her for an interview to find out more about her journey, and even some of her favorite Seattle spots.
How did you start your journey as a wellness blogger?
I graduated in 2015 with a Bachelor's degree in dietetics at Oregon State University then completed a 1200 hour internship before becoming licensed as a registered dietitian. I created my blog, Rachael's Good Eats, as a senior in college to share that eating healthy can be simple & enjoyable. Creating a positive environment around food, learning to think about ingredients and where they come from, and being mindful of what your body needs are just a few of the topics I hope to encourage through my page. What is your favorite recipe with 5 ingredients or less?
Raw Reese's Cups with dark chocolate, peanut butter, coconut flour, maple syrup, sea salt, coconut oil (6 ingredients, whoops!).
What are your top five Seattle places?
Frankie & Jo's (duh), Portage Bay, Juicebox Café, Melrose Market, and Gas Works Park. I have a whole Seattle guide on my blog that I LOVE to keep adding to as I discover more gems around Seattle.
You seem to love our naturally sweetened ice creams (i.e. Date Shake), what is the benefit of not eating cane sugar? How have you seen it affect your life/body?
I do!!! Overall, I eat a very low sugar diet and I've noticed a huge difference in my cravings, my sensitivity to sweet tasting things, my weight, energy levels, and my skin. I'm a huge proponent of participating in a 7-day added sugar detox (more info on my blog) to learn how to cut down your sugar intake and start learning how to read ingredient lists. When I do have sugar, I like to stick to more nutrient-dense alternatives, like raw honey or maple syrup. For instance, in the ice cream sandwich with Frankie & Jo's the entire thing is sweetened *without* cane sugar, using only coconut sugar, dates, & maple syrup. A perfect example of switching out ingredients and using alternatives that are better for your body in the things you love.

Tomorrow, Saturday, August 25, our collaboration with Rachael Devaux makes its debut. You don't want to miss this! We had the amazing idea to combine Rachael's famous gluten-free Cookie Skillet recipe with our Date Shake ice cream to create the most epic result: an ice cream sandwich that is completely free of gluten, dairy, soy, & cane sugar! To make it even better, we dipped the sandwiches into Eating Evolved paleo coconut sugar-sweetened dark chocolate magic shell! *high kick* We will be selling the sandwiches for *one day only* at our Capitol Hill Shop only. Come early & we'll see you in line at noon!
