A creamy, caramelized carrot ice cream is swirled with out-of-this-world “nuttercream” frosting, created from house-made coconut yogurt to achieve that familiar cream cheese tang. Studded with moist, nutty pieces of spiced carrot cake and layered with a pineapple-ginger jam throughout, this is the most delicious carrot cake you know and love.
